Gari, or Sushi Gari, is the sweet, tangy pickled ginger that completes any sushi or sashimi platter. Crafted from young, tender ginger (shin shōga), it is sliced incredibly thin and marinated in a solution of vinegar, sugar, and salt. The pale pink hue often seen in Gari comes naturally from the pickling process of young ginger tips, a sign of its freshness and quality.
